ZUCCHINI NUT BREAD 
3 eggs
1 c. oil
1 1/2 c. sugar
1 tsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 tbsp. cinnamon
1/2 c. chopped nuts
1/2 c. raisins or currants
2-3 c. grated zucchini

Combine eggs, oil, sugar and vanilla until well blended. Stir in dry ingredients. Carefully fold in nuts, raisins and zucchini. Put into 2 greased and floured loaf pans. Bake in 350 degree oven for 50 to 60 minutes.
