SWEDISH CUCUMBER SALAD
(PRESSGURKA SALLAD)
 
2 cucumbers, peeled and thinly sliced
1 onion, peeled and thinly sliced
1/3 c. water
1/3 c. vinegar
1/3 c. sugar
Salt and pepper to taste
Chopped parsley

Place cucumbers and onions in bowl. Combine sugar, water, vinegar, salt and pepper; pour over cucumber and onion slices and toss lightly. Cover bowl and refrigerate for several hours. At serving time, place in glass bowl and garnish with parsley.
