ZUCCHINI BREAD | |
3 eggs, beaten 3/4 c. vegetable oil 1 c. granulated sugar 1 c. brown sugar, firmly packed 1 1/4 c. whole wheat flour 1 1/4 c. all purpose white flour 1/4 tsp. baking powder 1 tsp. baking soda 2 tsp. cinnamon 1 tsp. nutmeg 1 tsp. salt 1 tsp. vanilla 2 c. shredded zucchini (about 3 med. zucchini) 1/2 c. finely chopped nuts In large bowl, combine eggs, oil, and sugars, stirring to mix well. Add flours, baking powder, baking soda, cinnamon, nutmeg, salt, and vanilla. Beat at medium speed on electric mixer until smooth. Blend in zucchini and nuts by hand, mixing well so batter is well blended. Spoon into 2 greased and floured pans. Bake at 350 degrees for 1 hour, or until toothpick comes out clean. Remove from pans immediately and cool on wire rack. |
