ORANGE MUFFINS 
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1 egg, slightly beaten
1/2 c. milk
1 tsp. grated orange rind
1/4 c. orange juice
1/4 c. vegetable oil
1/2 c. golden raisins

Combine first four ingredients. Make a well in center of mixture. Combine egg, milk, orange rind and juice, and oil. Mix well; add to dry ingredients, stirring just until moistened. Stir in raisins.

Spoon batter into greased muffin pans, filling 2/3 full. Bake at 400 degrees for 20 minutes. Yield: 1 dozen.
