ORANGE MUFFINS 
1 1/2 c. whole wheat flour
1/2 c. bran or bran cereal
1 1/2 tsp. baking soda
3/4 c. orange juice
1 egg, beaten
Grated rind of 1 orange (about 2 tbsp.)
1/4 c. honey
2 tbsp. oil or melted butter
1/2 c. raisins

In a large mixing bowl, combine the flour, bran and baking soda. In a separate bowl, mix the orange juice, egg, orange rind, honey, oil and raisins.

Combine with the dry ingredients. Fill well greased muffin cups about 3/4 full with the batter and bake at 375 degrees for 15 minutes. Makes 1 dozen.
