LAYERED SPINACH SUPREME 
1 c. Bisquick
1/4 c. milk
4 eggs
1/4 c. chopped onion
10 oz. frozen chopped spinach, thawed & drained
12 oz. cottage cheese
1/2 c. Parmesan cheese
5 oz. Monterey Jack cheese, cut in 1/2" cubes
Dash salt
2 cloves garlic, crushed or 1/2 tsp. garlic powder

Grease a rectangular glass baking dish, 9"x13". Preheat oven to 350 degrees.

PASTRY LAYER: Mix Bisquick, milk, 2 eggs and onion. Spread in bottom of baking dish.

1ST LAYER: Thaw and drain spinach. Spoon onto batter.

2ND LAYER: In a bowl, mix cottage cheese, 2 eggs, Parmesan and Monterey Jack cheeses, salt and garlic. Spoon onto spinach layer. Bake 30 minutes. Let stand 5 minutes.
