NEW ORLEANS PRALINES 
1 c. brown sugar
2 c. white sugar
5 tbsp. boiling water
1/2 stick butter
2 c. pecans
1 1/4 tsp. vanilla

Place sugars, water, and butter in saucepan over high heat. Boil 2 minutes or to soft ball stage. Remove from heat and add pecans and vanilla. Beat by hand until mixture becomes creamy and begins to sugar on sides of pan. (It is a good idea to prepare counter area with sheets of wax paper before beginning, as the candy hardens quickly.) Drop by spoon onto wax paper.
