CARROT MOLD 
1 lb. can crushed pineapple
1 pkg. lemon-flavored Jello
1/2 c. sugar
1/4 tsp. salt
1 tbsp. lemon juice
1 c. grated carrots
1/2 pt. whipped cream, whip until peaked

Drain pineapple, add enough water to make 1 1/2 cup of juice. Heat juice to a boil, add Jello and dissolve. Add sugar, salt, and lemon juice. Cool until slightly thickened. Add carrots, pineapple and whipped cream. Mold and chill. Tastes good when served with ham.
