CARROT PUDDING MOLD 
1/2 c. butter
1/2 c. brown sugar
2 eggs
2 c. grated raw carrots
3/4 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. lemon juice
1/2 tsp. lemon rind
1 tsp. grated orange rind

Cream butter with brown sugar. Add eggs, beat after each one. Add flour, baking powder, baking soda, salt, cinnamon, nutmeg, lemon juice, rind, carrots and orange rind. Put in greased mold or pan and bake 30 minutes in 350 degree oven.
