APPLESAUCE OATMEAL MUFFINS 
1 1/2 c. oats (either quick or old fashion)
1 1/4 c. flour
3/4 tsp. cinnamon
1 tsp. baking powder
3/4 tsp. baking soda
1 c. applesauce
1/2 c. milk
1 c. brown sugar
3 tbsp. vegetable oil
1 egg white (or whole egg)

TOPPING:

1/4 c. oats
1 tbsp. brown sugar
1/8 tsp. cinnamon
1 tbsp. melted butter

Combine oats, flour, cinnamon, baking powder and soda. Add remaining ingredients and mix together until moist. Fill muffin tins 3/4 full. Top with topping. Bake for 20 to 22 minutes at 400 degrees. Makes at least 12 muffins.
