2 lg. eggplants, peeled & chopped Cook in salt water 5 minutes. Strain and squeeze. Add: 1 egg Garlic & parsley to taste Salt, pepper & grated cheese to taste Mix together and shape in small balls (golf ball size). Fry until brown. Can be baked or broiled. |
