ZUCCHINI BREAD 
3 eggs
1 c. vegetable oil
2 1/4 c. sugar
2 c. grated zucchini
2 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
2 tsp. cinnamon
1 c. nuts, chopped

In a large bowl, beat eggs with oil and sugar. Beat in zucchini and vanilla. Stir in remaining dry ingredients. Stir in nuts. Pour into a greased 9 x 5 inch loaf pan. Bake at 325 degrees for one hour. Bakes one large loaf.
