ZUCCHINI BREAD 
3 eggs
2 1/2 c. sugar
1 c. oil
3 tsp. vanilla
2 c. grated zucchini
3 c. flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1/4 tsp. nutmeg

Sift dry ingredients together and set aside. With electric mixer at low speed, beat eggs and sugar together. Slowly add oil, then grated zucchini and vanilla. Add remaining dry ingredients. Bake at 350 degrees for 1 hour or until loaf top is firm and dry. Makes 2 (8 1/2 x 4 1/2 inch) loaf pans. Loaves can be frozen.
