JEANNE'S CRAB CAKES 
2 eggs
2 tbsp. mayonnaise
1 tbsp. horseradish mustard
1 tbsp. snipped parsley
1 tbsp. lemon juice
1 1/4 c. fine saltine cracker crumbs
12 oz. flaked crab meat
3 tbsp. salad oil

In bowl combine eggs, mayonnaise, mustard, parsley, lemon juice, 1/4 teaspoon salt and dash pepper. Add 1 cup crumbs and crab; blend well. Using about 1/3 cup for each, shape into six 1/2 inch thick patties. Coat with remaining crumbs; chill at least 30 minutes.

Heat oil in skillet. Cook patties over medium heat until golden brown on both sides, 6 to 8 minutes. Drain and serve immediately with lemon wedges, if desired. Makes 6 servings.
