2 c. of grated zucchini
1 tbsp. mayonnaise
1/2 tsp. Dijon mustard
1 tsp. Old Bay
1 egg
Bread or cracker crumb, enough to form cakes

Roll cakes in crumbs. Fry in oil or deep fat. Fry until brown.
