JEWISH APPLE CAKE 
1 c. oil
1 1/3 c. sugar
3 eggs
2 c. flour
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. vanilla
1/2 c. nuts
4 apples, peeled and sliced

Mix oil and sugar. Add eggs, then flour, salt, cinnamon and baking soda. Mix well. Add vanilla and nuts. Then add sliced apples. Top with mixture of sugar and cinnamon and nuts if you wish. I leave mine plain. Freezes well. Bake at 350 degrees 1 hour in tube pan.
