MEATLOAF 
2 lb. ground beef
1 c. dried bread crumbs
1/2 c. sour cream
2 eggs, beaten
1 tbsp. onion, minced
2 tsp. salt
1 (4 oz.) can mushrooms (pieces and stems drained)
1/2 c. catsup

Mix together all ingredients. Pat firmly in 9 x 5 inch loaf pan. Bake 50 minutes. When done, pour off fat, invert on warm platter. Spoon about 2 tablespoons catsup over top of meatloaf, garnish with parsley. Makes 8 servings.
