JAMBALAYA | |
Any combination of meats or seafood can be used, but a good combination is chicken and sausage. 1 chicken, cut into serving pieces 1 lb. sausage, cut into bite size pieces 2 med. onions, chopped 2 bell peppers, chopped 2 cloves garlic, chopped 2 or 3 tbsp. oil Rice Heat oil in pot then put in the sausage, just brown sausage then use a slotted spoon to dip out sausage leaving drippings. Put sausage aside to be used later. Add chicken to oil and sausage drippings and brown. Remove chicken and set aside. Add vegetables to drippings. Cook vegetables until they are almost a much (about 30 minutes). Now add meat to the pot. Add water to cover meat. Add rice 1/2 the amount of water added. Salt and pepper to taste. Bring everything to a rolling boil. Stir good once and reduce heat and simmer. When rice is done the Jambalaya is ready. |
