SHRIMP OR CRAB JAMBALAYA | |
3 tbsp. butter 1 c. chopped onion 1/2 c. chopped green pepper 1/2 c. chopped celery 1/2 lb. hot spicy pork sausage 1 1/2 tsp. garlic powder 2 c. chicken broth 1 lg. can tomatoes 2 tbsp. parsley Salt and pepper to taste 1/4 tsp. thyme 1/8 tsp. red pepper or more 1 bay leaf 1/2 lb. cooked shrimp or crab meat 1 c. uncooked rice In Dutch oven, heat butter, add sausage, make in small chunks and brown. Next add onion, celery and green pepper. Cook lightly until onions are tender. Stir in chicken broth and rest of ingredients except rice. Cook and bring to boil. Add rice, stir in. Simmer, covered 20-30 minutes. Add shrimp or crab meat, heat 5 minutes more uncovered. Serve. |
