CHEESE NOODLE OMELET 
3 c. uncooked noodles
1 onion, chopped
1/4 c. butter
6 eggs
1/4 c. water
4 oz. Cheddar cheese, grated
Salt & pepper to taste

Cook noodles and drain. In a large skillet, cook onion in butter until soft. Add noodles and stir. In a separate bowl, beat eggs, water, salt and pepper. Pour over noodles in skillet. Cook over medium heat. As eggs cook, lift edges so uncooked eggs will go to the bottom. When mixture no longer flows, add cheese. Continue cooking for 1 minute. Fold in half and serve.
