CHEESY CATFISH 
2 lbs. sm. catfish fillets
1 egg, slightly beaten
1/2 tsp. salt
1/2 tsp. pepper
1/4 c. butter
1 tbsp. milk
1 tsp. paprika
1/4 c. flour
1/2 to 1 c. Parmesan cheese

Heat oven to 350 degrees. Combine cheese, flour and seasoning. Dip catfish in combined egg and milk. Coat with cheese mixture. Place in baking dish. Pour butter over catfish, bake at 350 degrees until golden brown, approximately 30 minutes. Serves 4.
