CHOCOLATE MINT CREAMS | |
CRUST: 4 sq. unsweetened chocolate 2/3 c. oil 2 c. brown sugar 3 eggs 1 1/4 c. flour 1/2 tsp. baking soda 1/4 tsp. salt 1 tsp. vanilla SECOND LAYER: 4 c. powdered sugar 1 1/2 sticks butter (partially melted) 2 tsp. real peppermint extract 3 tbsp. milk TOPPING: 6 oz. semi sweet chocolate chips 5 tbsp. butter Melt chocolate in double boiler with oil. Add next 6 ingredients and spread in greased and floured 10 x 15 inch jelly roll pan. Bake at 350 degrees for 12 minutes. Cool completely. Mix powdered sugar, butter, peppermint extract and milk until smooth. Spread over cooled crust. Melt chocolate chips and butter in double boiler. Leave mixture setting over hot water and quickly spread over green filling. Chill and cut in squares. |
