CHICKEN RICE CASSEROLE 
1 c. diced chicken or turkey
1 c. cooked diced celery
1 c. uncooked rice - all three items are to be cooked in chicken broth
1 can undiluted cream of chicken soup
1/2 c. mayonnaise (but maybe you will only need between 1/4-1/2 c., use your own discretion)
2 tbsp. onions, chopped

Pour into buttered casserole - top with 1 cup crushed cornflakes (or potato chips) and 1/2 cup sliced almonds and 1/2 cup melted butter. Bake at 350 degrees for 45 minutes.
