BETSY'S CHICKEN TACOS 
1 whole chicken or 4 breasts
1 c. minute rice
1/2-1 lb. cheddar cheese (whatever you desire)
1 pkg. taco mix (use to taste)
1 pkg. flour tortillas

Boil chicken until easily removed from bone. Pull off skin and tear chicken into bite-sized chunks. Cook rice according to directions on box. Grate cheese. Mix chicken, cheese and rice all together. Then mix in taco seasoning according to your taste. Roll mixture into flour tortillas and fry until golden brown.
