PEPPERONI AND CHEESE MUFFINS 
1 c. flour
3/4 c. yellow corn meal
1 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt
1 egg
2/3 c. milk
1/3 c. oil
1/2 c. diced pepperoni
1 c. shredded Provolone cheese
1 tsp. oregano

Grease bottom of muffin cups.

Combine dry ingredients including cheese and pepperoni. Beat egg and add milk and oil. Pour into dry ingredients and stir until mixed. Batter will be lumpy. Bake 20 to 25 minutes at 425 degrees.
