CHEESE CAKE MUFFINS 
2 (8 oz.) cream cheese, softened
1 c. sugar
2 eggs
1 tsp. vanilla
Pie Filling or cream
Vanilla wafers

Beat cream cheese in a medium mixing bowl until soft and creamy. Gradually add sugar. Add eggs, one at a time. Stir in vanilla. Place a vanilla wafer in paper lined muffin tin. Spoon cream cheese mixture over wafer filling cups full. Bake at 350 degrees for 20 minutes. Leave in muffin tins and refrigerate overnight. To serve remove paper liners and top with cherry pie filling or whip cream.
