CAJUN FETTUCINI SAUCE 
1 qt. half & half
1 onion, diced
1 pkg. Parmesan cheese
2 sticks butter
Flour
Tony Chacheres Cajun spice

Saute onion in 1 stick of butter until the butter foams and onion turns a caramel color. Under a low heat stir in small amounts of flour until a paste forms. Gradually stir in the half & half. Then, turn the heat to medium. Next, stir in the second stick of butter. Season to taste. Once simmering pour in the grated Parmesan cheese. Serve over cooked fettucini.
