country ham 2 c. sugar 1 c. vinegar 1/2 c. honey 1 c. brown sugar 1/4 c. apple jelly 1 tbsp. cinnamon 1/2 tsp. ground cloves Step 1: Soak in cold water with 1 cup sugar and 1 cup vinegar for 8 to 24 hours. Make sure ham is covered. Step 2: In a pot large enough for the whole ham, bring water to a boil with 1 cup of sugar. Add ham when sugar is at full boil. Boil for 1 hour. Step 3: Remove ham from water and remove skin and as much fat as you wish. Best done when ham is hot. Preheat oven to 300°F. Score ham about 1/4-inch deep. Mix together honey, brown sugar, apple jelly, cinnamon and ground cloves and spread over scored ham. Bake 10 minutes per pound if ham is hot from boil. If ham is cold, bake 13 minutes per pound. |
