LEMON MERINGUE PIE 
1 pkg. (sm. size) lemon flavor pudding & pie filling
3/4 c. sugar
2 1/4 c. water
3 eggs, separated
2 tbsp. lemon juice
2 tbsp. butter
1 baked (9 inch) pie shell

Combine pie filling, sugar and 1/4 cup water. Blend in egg yolks and balance of water. Cook over medium heat, stirring until mixture comes to a bubbling boil. Remove from heat and blend in lemon juice and butter. Cool about 5 minutes, stirring about 2 times while cooling. Pour in cooled pie shell.

Beat egg whites until foamy. Beat in 6 tablespoons of sugar and continue beating until it forms in peaks. Spread over pie filling and bake at 400 degrees for 8 to 10 minutes until meringue is a delicate brown. Cool 4 to 5 hours before serving.
