PAPA BETO'S PASTA 
2 tbsp. clarified butter
1 chicken breast, cut into 8 pieces and dusted with flour
2 cloves garlic, finely chopped
1 green onion, finely chopped
2 oz. Bavarian ham, slivered
1 1/3 c. heavy cream
Romano cheese, grated
Salt and pepper
2 servings angel hair pasta, cooked and tossed with 2 pats of sweet butter

Saute chicken in clarified butter over medium heat, being careful not to scorch butter. When chicken is almost tender, mix in garlic, onion and ham. Salt and pepper to taste. Mix whipping cream and one tablespoon romano cheese with chicken mixture. Simmer to reduce liquid about 2 minutes. Mix in pasta, add more romano cheese and toss. Serve immediately. It's quick and easy. Adjust garlic to taste.
