MAY'S SCOTTISH COOKIE BARS 
This recipe was given to me by May who came from Scotland. You will need a scale for these authentic Scottish cookie bars. My friend has kept this a family recipe and only gave it to me. In memory of May I am sharing this recipe with all of you.

1 lb. (4 sticks) melted butter
8 oz. sugar (use scale)
4 oz. cornstarch (use scale)
18 oz. flour (use scale)

Note: The scale I use was inexpensive. It had a square cup rather than a flat surface.

Preheat oven to 350°F.

Melt butter, add sugar, cornstarch, and flour. Mix together by hand. Put in 13x9-inch pan. Poke holes with fork.

Bake at 350°F for 40 to 45 minutes, just to lightly brown.

Slightly softer than most Shortbreads. Don’t wait for it to cool, cut into sizes you want. Sprinkle top with sugar if desired.
