CHICKEN ANGELO 
8 oz. fresh mushrooms, sliced, divided
4 lg. chicken breasts, skinned & boned
2 eggs, beaten
1 c. bread crumbs
2 tbsp. butter
6 oz. sliced Mozzarella cheese
3/4 c. chicken broth
Hot cooked rice or noodles
Fresh parsley, chopped

Place half the mushrooms in a 13"x9" baking pan. Dip chicken into beaten eggs, roll in bread crumbs. In skillet melt butter over medium heat. Brown both sides of chicken in skillet. Place chicken on top of mushrooms. Arrange remaining mushrooms on chicken. Add chicken broth to pan. Bake at 350 degrees for 30 to 35 minutes. Serve over hot cooked rice or noodles with chopped parsley. 4 servings.
