RHUBARB JAM 
5 c. rhubarb, diced
1 c. water
5 c. sugar
1 c. pineapple, crushed
2 (3 oz.) pkgs. strawberry gelatin

Wash and dice rhubarb into 1/2" pieces. Combine rhubarb, water and sugar; simmer for 10 minutes. Add pineapple, undrained, and simmer for 10 minutes more. Remove from heat and quickly stir in the gelatin. Mix until smooth. Immediately pour into hot sterilized jars. Seal. Makes about 3 pints.
