MANDARIN BLUEBERRY PIE 
32 oz. vanilla flavored nonfat yogurt

(Let drain in strainer lined with coffee filters for 24 hours for yogurt cheese.) 1-2 tbsp. unflavored gelatin 1 1/2 c. orange juice 2 tbsp. confectioners' sugar 2 c. fresh blueberries

Drain orange sections, reserving liquid. In saucepan, soften gelatin in reserved liquid for 5 minutes. Place over low heat and stir until gelatin dissolves. Stir in orange juice.

Combine blueberries, oranges and sugar; set aside. Place yogurt cheese in a medium bowl. Gradually add gelatin mixture and whisk together until smooth. Fold in fruit. Pour into a 9 inch pie pan. Chill 4-6 hours or until set. Cut into 8 sections. Calories - 160 per section.

I used 2 packets of unflavored gelatin. Made 2/3 full of 2 (9 inch) pie pans. 80 calories per section.
