ZUCCHINI QUICHE 
2 c. diced zucchini
1 tsp. butter
1 tsp. salt (optional)
1/4 tsp. pepper
1 pkg. chicken Stove Top stuffing mix, uncooked
1 3/4 c. milk
4 eggs
1/2 c. Bisquick
1/2 c. grated Parmesan cheese

Lightly saute zucchini in butter and season with salt and pepper. Place in 2-quart casserole. Place in blender the Bisquick, milk, eggs and cheese. Blend 1 minute.

Pour half of mixture on top of sauteed zucchini, alternate with stove top uncooked. On top, pour rest of mixture on top of stove top. Bake at 350 degrees for 50-55 minutes. Let rest before serving.
