OLD - FASHIONED RAISIN PIE 
2 c. raisins
1 c. boiling water
2 eggs
2 tbsp. flour
1 c. sugar
2 tbsp. butter
Grated lemon rind (1 lemon)
2 tbsp. lemon juice
Pastry for bottom and top

Line a 9 inch pie plate with 2/3 of the pastry. Place raisins in small saucepan; cover with boiling water. Bring to a simmer and cook slowly 8 minutes. Cool to room temperature. Preheat oven to 425 degrees. Beat eggs; combine flour, sugar, and gradually beat into eggs. Cut butter into little pieces and add. Combine egg mixture with raisins, liquid, and lemon. Turn into pastry. Cut pastry strips for top. Bake 10 minutes at 425 degrees then turn oven down to 350 degrees and bake 20 minutes longer.
