SOUTHERN SMOTHERED CHICKEN 
1 med. (2 1/2 lb.) fryer
1 bunch green onions
2 stalks celery
1 bell pepper
3 tbsp. flour
1 yellow onion
2-3 oz. bacon drippings
Salt and pepper to taste

Cut up chicken into small pieces. Wash and place in large skillet. Add all ingredients except flour. Cover with water. Cover skillet and cook on medium heat until tender.

Take flour. Put in cup. Fill 3/4 full of water. Make a paste. Add to chicken. Turn stove to simmer for 5 minutes. Can be served on bed of rice. Time 45-50 minutes.
