ROSIE'S SOUTHERN FRIED CHICKEN 
9 pc. chicken
1 1/2 c. Crisco shortening
1/4 c. salt
Black pepper to taste
Seasoning salt - Lawry's
Flour to coat chicken
Water
10 or 12-in. heavy skillet with tight fitting cover

Soak chicken in 1/4 cup salt with enough water to cover chicken for 2 hours or overnight in refrigerator.

When chicken has soaked for alloted time, drain and rinse chicken. Season chicken with black pepper and Lawry's seasoning salt. Coat with flour.

Heat Crisco in pan until hot. Place chicken in hot oil - cover - turn heat to medium and cook until chicken stops sizzling. Turn chicken and repeat. When chicken is done, remove cover. If chicken is not brown, turn heat up and brown. It takes approximately 30 to 35 minutes to fry one pan of chicken.
