ZUCCHINI CASSEROLE 
3 med. zucchini, sliced
1 lb. Colby OR Cheddar cheese, grated
3 med. carrots, grated
1 onion, diced
8 oz. box fresh mushrooms, sliced
8 oz. sour cream
1 can cream of mushroom soup
1/2 c. butter
1 box (double pack) pork flavored Stove Top stuffing mix

Steam zucchini until tender and place in greased casserole dish. Layer all the cheese. Next, layer with soup mixture. Next, melt butter and add to packs of stuffing mix. Place on top and bake at 350 degrees uncovered 45 minutes. Serves 8-10.
