ZUCCHINI CAKE 
1 c. salad oil
3 eggs, beaten
2 c. sugar
2 c. zucchini, grated raw
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
1 c. chopped walnuts or raisins

Combine oil, eggs, sugar, zucchini and vanilla in large bowl. Blend well, stir in flour, soda, baking powder, salt and cinnamon. DO NOT BEAT. Stir in walnuts, spoon into a greased oblong cake pan. Bake at 325 degrees for 45 minutes.
