NEW SCOTLAND CLAM CHOWDER 
6 slices bacon
1 can potatoes (16 oz.)
2 cans minced clams (7 1/2 oz.)
1 1/2 qts. milk
1 tbsp. minced onion (opt.)

Cut bacon into 1 inch pieces. Fry until crisp. Remove and drain. Set aside. Cut potatoes into 1/2 inch cubes and fry in bacon drippings, then discard drippings.

Add clams, milk and onion and heat. Season to taste. Ladle into bowls and sprinkle crisp bacon on top. Serves 6 to 8.
