BRUNCH CHEESE CASSEROLE 
8 slices of bread
1 lb. of bacon or 3 c. cubed ham
1 c. milk
12 oz. grated cheddar cheese
12 eggs
1 can mushrooms (opt.)

Cut crust from bread and place in buttered 9 x 13 inch pan. Sprinkle with cheese. Fry the bacon and crumble over the top. Beat eggs and milk. Season with salt and pepper. Pour over bacon. Cover with saran wrap and refrigerate 10 to 12 hours. Add mushrooms right before baking. Bake at 275 degrees for 1 hour, uncovered.
