1 lb. kidney or pinto beans 2 lbs. hamburger or chili beef 1 lg. onion 2 med. green peppers (cut in 1/2 inch cubes) 1 (32 oz.) can stewed whole tomatoes 1 Shelby's chili spice packet Cayenne pepper to taste Salt and pepper to taste 1 (8 oz.) tomato sauce Masa flour 1. Soak beans in water overnight. 2. Cook beans in water (10-12 cups, depending on consistency desired) 1 1/2 - 2 hours, simmer after initially bringing to boil. Add onions quartered into beans after 1 hour. Add green peppers into beans after 1 hour. Add stewed whole tomatoes last 1/2 hour of cooking beans. 3. Brown hamburger in skillet, then drain fat. Add 8 ounce can of tomato sauce to skillet. Add spice packet to skillet. Add 1 1/2 cups water to skillet. Bring to boil then simmer for 10 minutes. Add to beans. 4. Cook beans and meat mixture for 10 minutes at simmer. 5. Add masa flour to thicken. This is not a classic chili recipe and may be served almost as a stew although flour and extended cooking will thicken the dish. Good alone but may serve with rice and topped with sharp cheese. |
