CHRISTMAS WHITE FRUIT CAKE | |
1 c. butter 2 c. white sugar 12 egg whites or 6 whole eggs 1 tsp. vanilla 3 c. flour 1 tsp. baking powder 2 lbs. candied cherries (red or green) 1 lb. pecans 1/4 lb. white raisins Cream butter; add sugar and mix. Add eggs and beat thoroughly; add vanilla. Sift dry ingredients separately. Mix all fruit and nuts into the dry ingredients, then add all to creamed mixture. Pan must be greased and brown paper-lined. Large tube pan - bake at 250 degrees for 2 hours. Small or medium loaf pans - bake at 300 degrees for 1 1/2 to 2 hours. Must test for doneness. Cool slightly and remove brown paper. |
