OLIVER'S FAVORITE OATMEAL
COOKIES
 
I like to make a double batch! I leave one batch plain and add cinnamon and raisins or chocolate chips to second batch.

1/2 c. granulated sugar
1/2 c. packed brown sugar
1/4 c. butter (softened)
1/4 c. shortening
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. vanilla
1/4 tsp. baking powder
1/4 tsp. salt
1 egg
1 1/2 c. quick cooking oats
1 c. all-purpose flour
1 c. raisins or chopped nuts (if desired)

Heat oven to 375°F. Mix all ingredients except oats, flour and raisins. Stir in oats, flour and raisins. Drop dough by rounded teaspoonfuls onto ungreased cookie sheet. Bake until light brown, about 10 minutes.

About 2 dozen cookies.

Variations:

CHOCOLATE CHIP OATMEAL CRISPIES - Omit cinnamon and raisins. Add 1 cup of chocolate chips instead.

OATMEAL CRISPIES - Omit cinnamon and raisins.
