OLD WORLD POTATO BREAD | |
2 1/2 c. flour 3/4 c. mashed potato (or mix 1/2 c. water with 3 tbsp. milk, boil & add 1/2 c. instant mashed potato) 2 pkgs. yeast 2 tbsp. sugar 2 tsp. salt 1 1/2 c. water 3 tbsp. butter 1 c. whole wheat flour Combine 1 1/2 cups flour, mashed potatoes, sugar, yeast and salt. Gradually add very warm water in which butter has been melted. Beat on high speed 2 minutes. Stir in wheat flour and enough white flour to make soft dough. Knead 6 to 8 minutes. Let rise until double. Divide into 2 portions and roll into 8 x 12 inch shape. Roll up from small side; pinch seam and place on greased sheet. Flatten slightly and let rise again. Score with knife 3 1/4 inch cuts and dust with 1 tablespoon flour. Bake at 400 degrees for 25 minutes or until done. |
