POTATO - WHITE BREAD 
5 c. milk
1 1/2 sticks butter
1/2 c. instant potato flakes
1 c. brown sugar
1 1/2 tbsp. salt
1 c. very warm water
1 tsp. sugar
2 pkgs. yeast
White flour

Scald milk. Pour into mixing bowl and add butter and potato flakes. Cool to lukewarm. Add brown sugar and salt. Dissolve yeast and sugar in very warm water. Let sit until frothy. Add to milk mixture. Gradually add white flour until dough leaves sides of bowl. Knead on floured board until smooth and not sticky, adding flour if needed, about 10 minutes. Put in greased bowl, turn dough and cover with damp cloth. Let rise until doubled. Shape into 4 loaves, put in 4 (9 x 5-inch) greased pans. Let rise until doubled. Bake at 350 degrees for 30 minutes or until done. Brush while warm with butter.
