KUGALIS (LITHUANIAN) 
1 lb. bacon
1 lg. onion
10 lbs. Idaho potatoes
1 lg. can condensed milk
1 doz. eggs
2 tbsp. salt

Cut bacon up fine and cook in large skillet. Chop onion and cook in same skillet, moving bacon to one side. Cook onion until yellow, do not brown. Set aside.

Shred potatoes in food processor. (Hint: To keep potatoes from getting brown or dark, drain off liquid as you shred 2 or 3 potatoes and immediately soak the drained potatoes in the condensed milk.)

Beat the eggs and stir into the potato mixture. Add salt. Add bacon, onion, together with drippings. Stir well.

Pour mixture into large casserole dish and bake for 1 hour at 350°F.

Drippings will rise to top, but will form a crust on top and all around. After 1 hour, remove from oven. Serve with sour cream. Leftovers may be sliced and fried in butter. To make less, cut recipe in half.

Serves 12-14.

This is as close to my mother's recipe I have found. Can't wait to cook. Crust was always my favorite. She would bake it in loaf pans so there was more crust for everyone!

Suggestion: She would crush a Vitamin C tablet (2 or 3) and mix with potato mixture to keep from turning brown.

Also, a sauce consisting of fried bacon crisp and condensed milk is an excellent compliment.

This is also the closest recipe that I have found online. I make one similar to this every year at Christmas. I start my oven at 425°F. and while I am shredding the potatoes I add the bacon grease and the pan I am cooking into the oven to get super hot. Then I pour the potato mixutre into the pan (it makes a crust all around the dish) and stick the mixture in the oven for 20 minutes @ 425°F and then reduce the heat to 350°F and bake until done. The crust is AWESOME when it comes out. I shred my potatoes quickly so they don't turn brown...good luck!

Very similiar to what I make. Serve with sour cream on top when hot or re-heat by pan fruying. A staple in our house. I bought a machine from lithuania to grate potatoes - food processor does NOT make it come out right! I make 20 lb. of potatoes at a time and it is perfect every time. Gone in 2 days with five people!
