FRUIT STACK CAKE 
6 c. plain flour
3 eggs
1 tsp. baking soda
Cinnamon and allspice to taste
2 c. brown sugar, packed
2 sticks butter
1 tsp. vanilla

Beat together sugar and butter until creamy. Add eggs, vanilla, soda and spices. Add flour slowly. Dough will be very thick. Chill dough in refrigerator. Roll into very thin layers, 1/4-inch thick onto floured wax paper. Cut shape using cake pan. Freeze layers on wax paper. Grease and flour cake pans before baking. Bake at 350 degrees for 10-15 minutes. Take out immediately and cool on racks.

FILLING: Dried apples or other fruit, cinnamon and nutmeg to taste, sweeten as desired.

Place bottom layer rounded side down on sturdy plate. Spread thin layer of filling onto cake layer, alternating filling and cake layers. Top layer - spread with extra filling and garnish with candied cherries if desired. Makes 11 layers. Secure cake with toothpicks to prevent toppling.
