COFFEE BLOND BROWNIES 
1 lb. dark brown sugar
3/4 c. butter
2 tbsp. instant coffee powder
1 tbsp. hot water
2 eggs
2 tbsp. vanilla
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 c. chocolate chips

Heat brown sugar and butter until butter melts. Dissolve the coffee in the hot water and stir into the butter; cool. Preheat oven to 350 degrees. Butter an 11 x 8 inch baking pan.

When butter mixture is cool, beat in the eggs and vanilla with hand-held mixer. Sift the flour, baking powder and salt together and stir into the butter mixture with a wooden spoon. Stir in chocolate chips.

Spread the mixture in pan. Bake until lightly browned, 25-30 minutes. Do not overbake! Cool. Yield 20 brownies.
